I love to eat momo 😍. When I was in Kolkata I used to have them frequently with my friends. In the city of joy, you will find these dumplings in every street, that too very cheap:o. They serve it with a clear soup and schezwan chutney (lol, I’m salivating🙊). But it is not easily available where I live now :'(. So, I have no choice other than making it at home. Actually it is not that difficult and I can stuff it with any filling I want.
For the Dough
1.5 cup all purpose flour
1 tbsp oil
½ tsp salt
Water as required
150g minced chicken (if you are making veg momo, replace with 1 cup soaked soya granules or add more veggies)
½ cup chopped cabbage
3 tbsp chopped carrots
2 tbsp chopped capsicum
2 small onions, chopped
8-10 cloves of garlic, finely chopped
1 tbsp lemon juice
1.5 tbsp soya sauce
1 tsp chilli flakes
1 tsp ground black pepper
Salt, to taste
- Knead a tight dough with flour, oil, salt and water. Cover and keep aside.
- In a microwave safe bowl, mix all the ingredients required for filling except chicken and microwave on full for 2 mins. Add chicken, mix well, again microwave for 2 mins or till the chicken is cooked. Cover for 30 mins. Bring it at room temperature.
- Roll the dough into a cylindrical shape and cut into equal pieces. Roll them flat and round (around 3 inches in diameter) keeping the sides thin.
- Here comes the tricky part, shaping the momos. It will take some practice (I learned it after trying on 2 momos, not very tough). Refer the pictures to understand it better. Fill the dough with 1 tbsp of the stuffing in the center. Apply water to the edges. Rest one side of the circle on your index or middle finger of left hand. Start pleating i.e. folding the rest of the side around 1 cm each fold overlapping the previous fold pressing on the edge resting on the finger. Pinch the ends, and done.
Alternative: If this is not your cup of tea, just gather all the sides, press and twist like a money pouch. Or simply stuff the half of the circle and cover it with the other half making a semi circle. Press well and pinch the corners together.
- Place these dumplings on a greased steamer pan and steam for 5-6 mins.
Alternative: I make my own steamer. Boil one cup water in a pan. Place a flat base container upside down in the center. Grease a plate and put the dumplings on it. Place the plate on the container carefully so that it is not touching the boiling water. Cover and steam for 5-6 mins.
- Serve hot with schezwan sauce or mayonnaise.
If you don’t want it healthy, go ahead and deep fry them. That tastes heavenly. Experiment with the filling. Chocolate momo is one of my favorites.
